The chasen whisk is a key tool in matcha preparation and proper etiquette for its use, storage, and maintenance ensures its longevity and effectiveness.

PREPARATION

  • Soften the prongs - Before using the chasen, soak it's prongs in warm water for at least 30 sec. This softens the bamboo, reducing the risk of breakage during whisking and allowing for better aeration of the matcha.

PRopper Technique

  • Use a gentle but brisk "M" or "W" motion when whisking Matcha in the bowl.
  • Avoid pushing the whisk against the bottom to preserve the delicate prongs.
  • Aim for a velvety-smooth, frothy surface with tiny ubbles to indicate well-mixed and aerated matcha.

Storage

  • Air-dry upright. Place the chasen on a chasen holder (kusenaoshi) or store it upright to maintain it's shape and allow propper drying.
  • Avoid moisture. Ensure the chasen is completely dry before storing to prevent mold or mildew. Never leave it soaking in water for extended periods.
  • Store in a cool, dry place away from direct sunlight, heat or humidity. Bamboo is sensitive to invironmental conditions.

Cleaning

  • Rinse Immediately after use thoroughly under warm running water to remove matcha residue. Avoid using soap as it can dmage the bamboo and leave a lingering taste.
  • Inspect for residue if matcha powder clings to the prongs, use your fingers or a soft cloth to gently clean it.
  • Avoid harsh cleaning. Do not use avrasive materials or dishwashing machines as they can damage the bamboo and alter it's shape.

Maintenance

  • Periodic inspection. Check for cracked, broken or warped prongs. Over time the bamboo will naturally degrade and a chasen with significant damage should be replaced.
  • Use regularly to help maintain the flexibility and function of the prongs.
  • Replace as needed. A well cared for casen can last months or even years and as they are made entirely from bamboo, they don't last forever. Signs of escessive ware such as splintering, brittleness or loss of shape indicate it's time to replace it.

Purpose: The goal of shaping the bristles is to ensure they spread out evenly, making the whisking process more efficient and allowing you to create a smooth, frothy matcha. Using a chasen holder helps maintain the proper shape without damaging the tines.

Method: After blooming your chasen, place it into a chasen holder (a small stand specifically designed to hold the whisk). Gently position the tines so they naturally fan out in the holder. This will help the bristles maintain their form and prevent them from becoming misaligned or overly bent. The holder allows the whisk to dry evenly while keeping the tines spread, ensuring the best whisking performance.
